Why we love this bottle

Tissot is the family that defined what Jura wine could be. Stéphane took over from his parents in 1990, converted everything to biodynamics by 2004, and spent three decades learning to get out of the wine’s way. Fifty hectares across some of the finest terroirs in Arbois, farmed with the kind of patience and precision that shows in every bottle. What makes the estate remarkable is not one great wine but the entire range: a consistent, honest expression of what this strange, beautiful region can do. We love it because there is nothing performative about it. Every bottle is just Tissot being Tissot.

A Crémant du Jura made entirely from estate fruit, fermented with indigenous yeasts, and topped up for the secondary fermentation with the estate's own fermenting vin de paille juice instead of commercial sugar. Indigène means everything comes from here. A blend of Chardonnay, Pinot Noir, Poulsard and Trousseau, aged 13 months on the lees. Baked apple, pear skin and dried pineapple on the nose, with Jura nuttiness and a subtle oxidative edge. Creamy but dry, with bright citrus acidity and a long toasty finish.
