Why we love this bottle

Ambijus is based in Denmark and approaches alcohol free drinks with the same mindset you would expect from a modern Nordic kitchen. They work with foraged plants, orchard fruit and herbs, using fermentation, infusion and slow extraction to create complexity that does not rely on alcohol or added sweetness. Everything is built from raw ingredients. Nothing is recreated in a lab and nothing is adjusted afterwards to imitate wine.

Clearly Confused brings together cedar, quince, sea buckthorn and a mix of lightly smoked botanicals. Some ingredients are fermented to build texture and quiet bitterness, while others are infused to keep the aromatics bright. The blending is done in small batches, and the structure comes from natural tannins, acidity and time rather than additives. That is why the drink feels layered in a way that is rare for this category.
