Cul Sec is a small Dutch producer that builds non alcoholic drinks through real fermentation rather than flavouring. They work with fruit, vegetables and herbs the way a chef thinks about ingredients, focusing on raw material, technique and balance. For Souris sous la Rhubarbe they start with fresh rhubarb juice, then layer in lacto fermented tomato and blackcurrant leaf. Each element adds something specific. The rhubarb gives sharpness and lift, the tomato brings depth and savoury tone, and the blackcurrant leaf adds a quiet greenness that holds everything together.
Nothing here is imitated or adjusted afterwards. The structure and dryness come naturally from the fermentation and the ingredients themselves. That is why the drink behaves more like a tightly shaped white or a pétillant naturel than a soft drink.
